Chocolate & Coffee Mud Pie (Raw, Gluten/Grain/Dairy Free & Nearly Vegan)

This recipe was the marvelous result of a self induced challenge. Currently where we are staying has no proper oven and very basic kitchen equipment except a blender ( although not a peeler for some reason?) but I have the desire for a grand cake like dessert which I thought would have to go unanswered.


Thankfully it did not, and this cheesecake inspired pie was born! It is more like a cheesecake than pie ( I think of pies being encased in pastry only) but there is no cheese in it, or gluten, grains, dairy or refined sugar. It also happens to taste amazing and have a surprising secret ingredient for the coffee filling…

It is filled with proteins, good fats and no refined or synthetic sugars of any kind. Its is a completely raw cake and if you are feeding a vegan you can omit that raw egg yolk and they will be happy too:)

So enjoy and rest assured that if you end up stuck with no oven you can still eat cake. Phew!

*This recipe is in cups and not scales could be found in the out back of South Africa, feel free to just use a standard mug just make sure you use the same one throughout the recipe. This make produce larger/smaller pie:)

Chocolate & Coffee Mud Pie

A tasty coffee and chocolate concoction with some surprising ingredients!
Servings 6

Ingredients
  

  • Base
  • 1 cup almonds
  • 1 cup desiccated coconut
  • 1/2 cup sun flower seeds
  • 3 dates
  • pinch salt
  • 1 tbsp coconut oil
  • 2 tbsp cocoa powder
  • Filling
  • 1 large ripe avocado
  • 3-4 tbsp raw honey
  • 2.5 tsp ground coffee I used decaf organic
  • A few pinches of salt
  • 1 -1.5 cups of water
  • 1 egg yolk
  • 1 cup soaked almonds

Instructions
 

  • Put all the base ingredients in a blender and blender until clumps are formed. Then push and evenly spread into a greased standard size cake tray.
  • Place in freezer.
  • Blender the soaked almonds until fully broken down, add a few drops of the water. Then add the other ingredients and add the water a little bit at a time only until it becomes a thick smooth liquid. You may not need to add all the water so just add a little at a time.
  • At this point taste the filling mixture and add more honey or coffee to your taste as this is a raw pie!
  • Once the filling is smooth pour over the base and place in the freezer for 45 mins for a 'soft serve' or leave overnight for a more frozen/hard dessert. Both are tasty!

Notes

This will keep for weeks in the freezer, just although 5-15mins to thaw before slicing and serving.
1 cups almonds = 168g
1 cup desiccated coconut = 80g
