Coconut Butter Bites

Coconut and chocolate, protein filled, delicious balls of goodness.

Ingredients
  

  • Bites
  • 1 cup of cashews soaking optional may yield smoother texture
  • 3/4 cup dessicated coconut no added anything to coconut
  • 1/4 cup organic butter
  • 1 tsbp honey - according to taste
  • Chocolate covering
  • 1/4 cup butter melted
  • 2 tbspn cocoa powder
  • Honey to taste I used 1 tspn
  • Drop of vanilla essence
  • 1/2 cup dessicated coconut - optional

Instructions
 

  • Place cashews in a food processor for several minutes , until it become smooth and 'butter' like.
  • Add all the other 'bite' ingredients and blitz until smooth (here you may need to taste and adjust the sweetness level with the honey - hard task!)
  • Next mix the cocoa with the melted butter and add honey and vanilla extract to taste - let it cool a little until it become slightly thicker.
  • Then using you hand grab small handful of the cashew mixture and roll into small balls in your hands, then dunk the balls into the chocolate sauce and if you want then roll them in the coconut - it is messy work.
  • Place on a glass/ceramic plate.
  • Do this until all the cashew mixture has gone (into balls or your mouth - your choice).
  • Place in freezer for at least 15 mins.
  • Remove and using a spatula lift off the bites and eat (or place in container to store in freezer).

Notes

If you find the rolling of the bite mixture difficult and have more time , place it in the fridge or freezer for 10-15 minutes as it will become more solid and easier to work with.
This is an ideal recipe to do in bulk, so why not double the mixture and keep a batch in the freezer so your never caught short and end up eating junk.
I have not made it with any other nut but I am sure almond and pecan would all be just as nice.
Please note these will begin to melt when out of fridge/freezer for a long period of time. So if you on the move - take an ice pack with you!
