cashews

vanilla powder or tsp vanilla extract

creamed coconut*

a pinch bicarbonate of soda

dark chocolate or cacao nibs
Instructions
Preheat oven at 200c
Place cashews in the blender with dates and creamed coconut. Blend until smooth ish.
Chop the dark chocolate into 'chips' and set aside.
Then add the other ingredients, except the choc chips/nib, and blend until smooth.
Pour into oven dish, so its about 1.5 cm - 2cm in thickness and cook until slightly golden - which is roughly 15- 25 minutes.
Notes
* this is the hard blocks - not the wet coconut cream
This would also work with almonds or pecan too!
