Chocolate Chip Blondies

Ingredients
  

  • 200 g cashews
  • 1/4 tsp vanilla powder or tsp vanilla extract
  • pinch salt
  • 2 small eggs
  • 75 g creamed coconut*
  • 4 medjool dates
  • 2 tsp raw honey
  • 50-100 ml water or milk of any kind
  • a pinch bicarbonate of soda
  • 30 g dark chocolate or cacao nibs

Instructions
 

  • Preheat oven at 200c
  • Place cashews in the blender with dates and creamed coconut. Blend until smooth ish.
  • Chop the dark chocolate into 'chips' and set aside.
  • Then add the other ingredients, except the choc chips/nib, and blend until smooth.
  • Pour into oven dish, so its about 1.5 cm - 2cm in thickness and cook until slightly golden - which is roughly 15- 25 minutes.

Notes

* this is the hard blocks - not the wet coconut cream
This would also work with almonds or pecan too!
