For salsa mix all ingredients in a food processor until chunky. Taste and add more salt or spice to your liking.
For guacamole do same as above but mix until smooth.
For the nachos fill a small glass dish with the crisps and cover with the grated cheese. Place under a medium grill and grill until cheese is melted (5mins max)
Serve with lots of guacamole and salsa and a side salad.
Notes
If you are not using a food processor just chop the ingredient small and mash with a potato masher. This would also go great with chilli.
