Vanilla Cream Ice Lollies

Creamy, dairy free ice lollies to satisfy those summer sun cravings!
Servings 4 lollies

Ingredients
  

  • 150 g Cashews - soaked
  • 2 tbsp Goji Berries
  • 2 tbsp Raw Honey
  • 2 pinches Salt
  • 1/2 Vanilla Pod seeds or 1tsp quality vanilla essence
  • 500 ml water
  • Dusting
  • 2 tbsp ground cacao nibs/raw caca powder/cocoa powder

Instructions
 

  • Soak the cashews for about 1-4 hours then drain.
  • Cut the vanilla pod in half the spilt one half length ways and scrape it with a sharp knife to remove all the black vanilla seeds.
  • Blend all the ingredient except the goji berries (or whatever dried fruit you are using) until smooth. Taste the mixture and add more sweetness is desired.
  • Add the goji berries and pulse a few time if you want a speckled effect or blend until smooth if you want peachy looking lollies.
  • Pour into a lolly mould (most supermarkets sell them) and leave to set ideally overnight.
  • Once set run hot water over mould to loosen then dust the chocolate if you like and enjoy!

Notes

Feel free to use other dried fruit, choc chips, fresh fruit, coffee, or any other flavour you can imagine!
Got some mixture left over? Then just pour it into ice cube tray to add to smoothies for for a mini iced sweet treat whenever you fancy!
