These have become set to be my favourite spring/summer recipe . They are super simple, very frugal, full of natural goodness and delicious. What more do you want!?
I saw a photo on Pinterest (my new found obsession follow me here) and just decided to make up my own recipe.
I have given you a pizza recipe before which is equally awesomely and full of goodness, but this one probably even simpler.
I use goats cheese as it easier to digest and goat seem to be less heavily farmed and therefore treated better, plus I like the taste. Also as Dan Buetter says in his Blue Zones book ( my holiday reading all which is compiled studies done on communities and individuals who live to be 100) :
“When compared to cows milk, goats milk delivers a powerful nutritional lunch: one glass contains 13 percent more calcium, 25 percent more vitamin b6, 47 percent more vitamin A, 134 percent more potassium and 3 times more niacin.”
Wow , goats definitely deserve more credit. So why not try switching you cows milk cheese to a bit of goats for an added nutritional boost?
Anyway enjoy these pizzas I know I will be making them lots whilst here in South Africa as they are so tasty and easy.
Recipe
Serves 2 – 3
Ingredients
2 Aubergines
8 tbsp tomato paste
1 tbsp salt
1 tbsp oil ( cold pressed olive oil ideally)
1 tbsp balsamic
125g hard goats cheese
Slice the Aubergine length ways into roughly 1 cm thick slices. Sprinkle with salt and leave for 5 mins.
Meanwhile grate the cheese and blend the the tomato paste, oil, salt and balsamic until smooth.
Rinse the Aubergine and turn on the grill to medium/high. Place the Aubergine under the grill for 5 mins. Then flip them over and grill for further 2-3 mins, the spread on the tomato paste and sprinkle on cheese and grill until golden (roughly 3-4 mins ) .
Serve with salad or my apple and celeriac coleslaw .
