Grain Free/Paleo Nachos with Homemade Guacamole & Salsa

They are just the perfect weekend food, super comforting, quick and a general crowd pleaser. 

Not ideal for people who are paleo or generally grain free as tortillas are made from corn, a grain, and a massively genetically modified grain at that. Now once in a while I may go wild and have real corn nachos at a restaurant but I felt it was sad to make this such a rare occurrence. So in true Super Naturally Healthy style I searched for an alternative and found a simply yummy one that is easy and wait for it, actually uses a packaged and pre made ingredient! OMG!

nachos 2Using some quality vegetable crisps you can easily whip up some nachos in no time, mix these deep fried vegetables  with some fresh homemade guacamole and salsa , then you have yourself a balanced and happy meal.

* Note cheese is not strictly paleo although I know many a paleo eaters who eat cheese once in a while as its is relatively low in lactose and can be beneficial – but if your hard core then leave out the cheese and use nutritional yeast instead.

Grain free/ Paleo Nachos with Guacamole & Salsa

Ingredients
  

  • Nachos
  • 125 g bag of vegetable crisp
  • 200 g Goats cheese or organic cheese
  • Guacamole
  • 3 avocados
  • tsp salt
  • 4 tbsp olive oil
  • Pinch Cayenne pepper
  • Handful fresh coriander
  • Juice of 1 lime
  • Salsa
  • 300 g cherry tomatos
  • 1/4 tsp cayenne pepper
  • 1 garlic clove
  • tsp salt
  • 4 tbsp olive oil
  • 4 tbsp tomato paste
  • 1 tbsp balsamic vinegar
  • 1/2 tsp raw honey
  • Small handful of fresh coriander

Instructions
 

  • For salsa mix all ingredients in a food processor until chunky. Taste and add more salt or spice to your liking.
  • For guacamole do same as above but mix until smooth.
  • For the nachos fill a small glass dish with the crisps and cover with the grated cheese. Place under a medium grill and grill until cheese is melted (5mins max)
  • Serve with lots of guacamole and salsa and a side salad.

Notes

If you are not using a food processor just chop the ingredient small and mash with a potato masher. This would also go great with chilli.
