I love nachos.
They are just the perfect weekend food, super comforting, quick and a general crowd pleaser.
Not ideal for people who are paleo or generally grain free as tortillas are made from corn, a grain, and a massively genetically modified grain at that. Now once in a while I may go wild and have real corn nachos at a restaurant but I felt it was sad to make this such a rare occurrence. So in true Super Naturally Healthy style I searched for an alternative and found a simply yummy one that is easy and wait for it, actually uses a packaged and pre made ingredient! OMG!
Using some quality vegetable crisps you can easily whip up some nachos in no time, mix these deep fried vegetables with some fresh homemade guacamole and salsa , then you have yourself a balanced and happy meal.
* Note cheese is not strictly paleo although I know many a paleo eaters who eat cheese once in a while as its is relatively low in lactose and can be beneficial – but if your hard core then leave out the cheese and use nutritional yeast instead.
