Maple & Pumpkin Granola – Paleo, Vegan & Super Simple!

I am sure I am not alone in finding it a tad more tricky to get up in the morning now that they are so much darker and colder. And if you live in Scotland, especially Glasgow like me, you will also find that ‘incredibly wet’ also be added to that list.

 

Not amazing motivation to get out of bed as you can imagine.

 

So if your left in a morning rush and just need a quick pour and go breakfast option then this Maple & Pumpkin Granola (Paleo, Vegan & Super Simple) is the perfect thing to have on stand by! Plus the prospect of eating is always a pretty solid motivation for me to move my curvaceous butt in the morning…

 

Now you know I LOVE my green smoothies and with some winter and festive tweaks then can still be the perfect breakfast or snack option. My Chocolate and Ginger Defence smoothie is a great example or my Blackforest Winter smoothie is also a winner but some times you don’t even have the 2 mins to blend up a smoothie in the morning and you need to pour and go! And I am all about providing SIMPLE solution to eating awesome food.

So once your have gotten into your green smoothie groove then this makes for a great addition  to your breakfast repertoire and to store in jar on your shelf for when you need it PLUS it makes your house smell amazing! Ideally make it just before you have friends round so you can smugly gloat in your domestic goddess prowess. Not that I ever do that of course….

I try to avoid cows milk (apart from in flat whites) so I serve with homemade Pistachio and Cardamon Milk (recipe in Simple Green Smoothies ebook) for one warming snack for breakkie and normal a glass of some go my Sweet Success juice (again recipe in Simple Green Smoothies ebook- I use that book white a lot as you can see for all my smoothie, juice and homemade milk needs!) for an all round nutrient kick up the arse.

 

Oh and yes this is full of goodness too – in true Super Naturally Healthy style! Lots of zinc for your immune system and skin/nails, blood sugar balancing goodness from the cinnamon, healthy metabolism boosting fats from the coconut oil and calcium from the almonds. BOOM.

Maple Pumpkin Seed Granola

Servings 4 portions

Ingredients
  

  • 175 g pumpkin seeds
  • 200 g sunflower seeds
  • 40 g desiccated coconut flakes would also be tasty
  • 75 g chopped almonds or other nut
  • 2 tbsp coconut oil
  • 3 tbsp maple syrup or raw honey not vegan
  • a pinch salt
  • 3 tsp cinnamon

Instructions
 

  • Preheat oven to 180c fan or 200c without a fan.
  • Melt coconut oil in pan and mix in with the maple syrup or honey.
  • In separate bowl mix all the other ingredients.
  • Then pour the coconut oil and syrup mixture over the other ingredients and mix until the seeds are all coated and glossy.
  • Then place on some grease proof paper on a baking tray and place in oven for about 15-20 minutes.
  • Watch the granola carefully as it will catch quickly and burn but once the seeds are golden in colour and puffed up slightly remove from oven.
  • Allow to cool thoroughly and then store in sealed jar.
