Today I am going to share with you a very happy accident.

Most of my best recipes come from my creative cooking sessions (my husband may call them make the kitchen a disaster zone sessions – but he enjoys the end result!) . It must be down to the artist in me (artist, me?! Why yes look here) that means I love nothing better that trying to create something delicious from weird or random ingredients. I love to make something beautifully tasty from the unexpected.

Today’s recipe is no exception. It is rich, chocolatey and truly delicious and the easiest dessert to make EVER with a surprising vegetable ingredient!

I made this for friends recently and it was chocolatey thumbs up all round.

Chocolate Pots

The quickest, easiest + healthiest pot of chocolate you can find anywhere! Its GAPS + SCD legal and grain/gluten free!
Prep Time 5 minutes
Servings 4

Ingredients
  

  • 150 g Butternut Squash cooked
  • 3-4 heaped tbsp Cocoa Powder depending on how dark you want it
  • 12 tbsp Natural Yogurt/Kefir
  • 1 Organic Egg Yolk
  • 2 - 3 tbsp of Raw Honey
  • 2 Drops Vanilla Essence
  • 1 tsp Gelatine
  • Berries to decorate

Instructions
 

  • Blend cooked butternut squash until smooth.
  • Add all the other ingredients and bend until smooth.
  • Taste to see if you want to add more honey/cocoa/vanilla.
  • Pour into some little pots (ramekins, teacups, mugs) and smooth the tops.
  • The place in fridge to set for about 15-20mins.
  • Use berries to decorate then serve.

Notes

You could make it more decadent by using soured cream instead of yogurt or serve it with soured cream on top.
If you want to make it posher why not place some hidden raspberries at the bottom of the pot or add a dash or you favourite liqueur? I am sure Rum Chocolate Pots would be delicious...
