I hope you know you are loved today and that love is so much wider, deeper, higher and greater than two people going out, than husbands and wives and boyfriend and girlfriends. Love is BIG and awesome, and never exclusive to ‘couples’. Rant over.

There has also been lots of exciting developments as I have been linking with other link minded companies, coaching new clients, nearly at the end of my sport nutrition diploma and setting up a LIVE workshop to take place in March!
But also my body has been doing weird things. Nothing major just the some new (!!) digestive/stomach issues, my skin is looking bleak and other signs of low immunity. This is no pity party for I am truly blessed woman (honestly I am it makes me cry some days when I dwell on Gods goodness to me! Yes you can gag now…), but I say this to keep thing real with you. I am still on a journey, I am still learning to listen to my body and am still on a healing process and this blog is not a ‘ I have made it I am perfect’ blog, but a real honest account of what trying to heal a lifetime of health problems looks like.
And now for pudding!
Its Valentines Day and this pink pudding surprise is a perfectly easy and pink pudding. Covered in my dark chocolate your break through the dark chocolatey goodness to reveal a coconut and vanilla pudding! Feel free to layer it and get creative or just eat it from the bowl!
Coconut & Vanilla Pudding
Ingredients
- Pudding
- 250 ml Coconut Cream
- 125 g Organic Butter
- 1 tbsp Vanilla Essence
- 3 tbsp Honey
- 100 g Ground Cashew
- 2 tbsp Natural Beetroot Juice optional and only if you want it to be pink in colour!
- Chocolate Topping
- 125 g Organic Butter
- 5 tbsp scoops of Organic Coconut Oil
- 2 tbsp Raw Honey
- 100 g Cocoa Powder
- 5 drops Vanilla Essence
- Fresh Strawberries
Instructions
- Blend all the pudding ingredients together until smooth. Pour into 6 - 8 serving dishes (i use glasses or teacups) and place in fridge for 30 mins.
- Melt all the chocolate ingredients together and allow to cool for 5-10 mins.
- Then pour the chocolate evenly over the pink pudding and allow to set in fridge.
- Feel free to decorate with fresh strawberries or to even embed a secret whole strawberry in the pudding for a pink surprise!
