Pesto 'Pasta' – Dairy free, Paleo and Super Quick!

Pesto PastaI LOVE pesto. I think as student I lived of the stuff and when  living in Italy I ate pesto on rice cakes most days (sounds weird until you try it). It makes for great instant dinners and who doesn’t like Pesto? 

The only sad thing is that often the shop bought stuff is 

A. Expensive
B. Filled with sugar and salt
C. And contains poor quality dairy, probably from unhappy cows.

So tadar! Here is a dairy free, super quick, pesto alternative. Now this has no cheese in or pine nuts (have you seen the price tag on pine nuts!) so this is not strictly pesto but a super tasty pesto like option. I couldn’t tell the different and neither could my other half so this is the perfect budget friendly alternative.

You can use this on whatever you like but I have been loving my spiraliser. I got it as a xmas present and is potentially one of those useless kitchen appliances, unless like me you don’t eat grains and so you can make spaghetti from ANY vegetable and use it all.the.time. Living the dream.

If you want an easy way to reduce your grain or gluten in take and up your vegetable intake, then get one of these.  Within 1 minute you can have a bowl fulls of courgette spaghetti ready to go and have fun whilst doing it.

Grain Free, Dairy Free Pesto & Spaghetti

The quickest way to get homemade dairy free pesto that taste awesome!
Servings 2

Ingredients
  

  • Spaghetti
  • 2 courgettes
  • Additional handfuls of spinach or rocket if desired
  • Pesto
  • 20 g large handful fresh basil
  • A small avocado
  • 2 tbsp cashews
  • 25 ml raw apple cider vinegar
  • 1/4 tsp quality salt
  • tbsp oil of your choice ideally cold pressed
  • Juice of 1/2 a lemon
  • 1 small garlic clove

Instructions
 

  • 'Spiralise' the courgette and place in bowl.
  • Blend all the pesto ingredients together until smooth .
  • Taste and add any additional seasoning if required.
  • Mix in with the spaghetti and leaves and serve.

Notes

Adding a poached egg or meat or nuts to this makes this a more filling meal. If you want a hot meal just gently warm it all on the hob for a few minutes.

  1. I love pesto but I’m definitely not a fan of what they put in some of the jarred stuff! More of a reason to make my own. And this one is so simple! A spiralizer is still on my wish list though 😉
