I remember getting a bit obsessed with falafel wraps once when travelling through Slovenia and Croatia, it seemed to be the only food we found. Granted we probably weren’t looking that hard as we were all happy to eat falafels for the entire trip.
Which is why these burgers appeared, inspired by the humble falafel and some musing on my past travels. These vegetarian babies are brilliant budget burger options. I love a good organic beef burger but my bank balance doesn’t always so thats why I praise the lord for chick peas.
Also as a grain free eater I use lettuce to wrap it in instead of a bun as it means you get more vegetables in your meal and less of the sugar from the grains. These are also super filling. Joe and I had two each with nothing else and we were pretty full!
They would also taste great with a variety of toppings cheese, avocado, bacon, coleslaw etc. Accompanied perfectly by sweet potato chips this would make the perfect saturday night supper!
