I am really squeezing all the sunny goodness out of this summer, making the most of summer flower, glimpses of the sun and any summer vibes I can grab.
This weekend was a great example. I created a massive super naturally healthy feast that was literally summer on a table even though it was grey outside. I knew it would be a busy weekend shooting a little promo film so I wanted prepare all the food in advance so I could just shove it on the table.
The table was heavy with naturally healthy goodness – so much so I think one of my guests had some detox symptoms the next day – next time I must remember to add some white bread to the mix to ease people’s bodies in gently with all this goodness!

It was so much fun – I highly recommend it. This was my menu for the day – lots of dips and lots of picky things to grab and get messy with and of course we ended it all with a massive chocolate fondue with loads of fresh fruit and a home-made chocolate sauce. I was so full after it all I didn’t eat the rest of the day – thats what proteins and naturally fats does for you keeps you full for ages!

I also made this little Chocolate Crunch Ice Lollies recipe for the feast as a pudding back up.
I live with the perpetual fear of not having enough food when guests are round so I always have something up my sleeve incase, you know an entire rugby team comes over and needs feeding. Needless to say we didn’t need these lollies (did I mention there was homemade fondue instead?), which I was secretly glad about so I have been munching on them all week pretending I am on holiday.
These are such a treat but super simple and contain loads of antioxidants from the raw cacao, protein and fats from coconut oil and almond flour – you don’t need to worry about crazy E numbers or the artificial sweeteners that are making this nation diabetic! Plus its a case of blend then freeze. Super simple which mean you can spend more time in the sunshine:) Win.

Chocolate Fudge Crunch Lollies
Ingredients
- 375 ml of nut milk almond, coconut, cashew or cows
- 2 tbsp ground almonds
- 1 tsp vanilla essence
- 2 tbsp raw cacao or organic cocoa powder
- 1 tbsp coconut sugar
- 3 medjool dates
- 1 tsp coconut oil
- 1 tbsp cacao nibs
Instructions
- Blend all the ingredient until smooth, except the cacao nibs.
- Stir in the cacao nibs after blended to provide the 'crunch'.
- Pour into mould and allow to freeze over 2-3 hours.
