There is nothing I love more than speedy sweet treat snacks that will actually do your body good, even more so at Christmas.

Regular meals times tend to go out the window, we eat at any sign of hunger and brie and crackers and cake suddenly becomes an acceptable afternoon munchie!

But to me is part of the joy and fun, Christmas is all about decadence isn’t it? But I will be adding in some super nutritious snacks  (and green smoothies) into the mix too to help keep my tummy full, immune system strong, mood happy and blood sugar stable. 

I originally made this Pecan Freezer Fudge recipe for my Eat & Be Merry festive recipe ebook but to be honest forgot it was in my freezer! But I discovered it in my annual freezer sort out (along with many other random muffins, chocolate pieces and random things that I  will just have to defrost to find out what they actually are!)

But here you go. Made in under ten minutes, will last for ages in the freezer and goes perfectly with a cup of cocoa. You can get creative with it and add cacao nibs, chocolate drizzle, raisin or whatever you fancy but I like these as they are.

Pecan Freezer Fudge

Simple and speedy nutritious snack that grain, gluten free and GAPS approved!

  1. 150g pecans
  2. 60g organic butter (or coconut oil)
  3. 1/4 tsp salt
  4. 3 medjool dates
  5. 1 tsp cinnamon
  1. Place all the ingredients in a food processor and blend until smooth, about 2-4 minutes.
  2. Pour the battery dough into a lined square dish or just onto some grease proof paper alone (as it won't run off the edge) and shape as desired.
  3. The place in the freezer and allow it to set for 30-40 minutes.
  4. Then using a sharp knife cut into squares.
  5. Feel free to drizzle with chocolate or top with whole pecan like in the photos.
  1. You can also shape these into balls too and cover with some cocoa powder if you want to make some Pecan Fudge Truffles.
